Just to clarify Nick's point:

Mac OS X dynamically allocates RAM to applications and processes as they need it and 
takes it back when they don't. This maintains access of all applications to the RAM 
they need when they need it without allowing one application to hog resources they are 
not using. Mac OS X always holds about 1/4 to 1/3 of the physical RAM installed in 
your Mac to itself, not even using it, just holding it as a reserve. Even if you have 
a ton of RAM installed Mac OS X will still use some virtual memory with applications 
[note this is not strictly true, if you have enough RAM installed it is possible to 
convince Mac OS X to stop paging your hard drive, its just not the most likely thing 
in the world].
