Create a disk image using the disk copy utility. File>new>new image and select the encryption option and pick a strong pass phrase. For best security don't store it in your keychain. Then double click the image to mount it like a disk. Drag files onto it. Anything stored in there is encrypted. Very powerful and very convenient. Even if the hard disk is used in another machine the data is unreadable, unlike the old password stuff. People should use this feature more often.
