You shouldn't try to copy your OS X installation. A simple Finder copy won't
do it since there are files and folders for which you don't have read
permission. Try to use Carbon Copy Cloner. If I was you, I would just
re-install OS X from the disk you have. It's then easy to upgrade to 10.2.3.
Then, you can look in your home directory, in Library/Preferences. That's
where most of the preference files are kept. You can usually just Finder
copy the apps you want to keep. There might be other things, however, that
could be left out, like stuff in the /Library directory, but not knowing
what you did exactly install, it's hard to tell. In any case, that stuff is
most likely accessible from the Internet, so if you find you're missing
something, you could always download it again.
