I don't know Amadeus, but I have used Sound Studio by Felt Tip for some time for ripping vinyl, cassette and radio to my hard disk from my stereo system, and it works pretty well. I use it to produce AIFF files and then let iTunes do the converting to MP3.
It has a timer record feature so that you can leave the house and the programme will record a radio programme at the time of your choice while you are out.
