You would benefit more from Panther than Jaguar, as it feels generally faster on slower CPUs. I would imagine that most of these applications would work under Classic, but I haven't tested them. One possible problem, though, could be with Toast as it might not have a cleared access to the hardware under Classic. Depending on the version you have, you might be able to download an updater that will make it native under OS X. Same with PhotoShop 7.
