Because it is what Apple designed the maximum to be, and what Apple expects the maximum to be. Anything beyond that will likely work (like the 8600 which can go up to 1GB of RAM, when it was designed for a max of 512MB IIRC) if the chips meet the specs for the RAM interface, but it isn't guaranteed to work properly.

Some have written that the Lombard is happiest with 384MB total. Wonder why
that is?
