You could try to use Pacifist to open the OS X installation packages on the
installation CD, then choose which applications you want to install. Check
on VersionTracker for Pacifist...

Your Safari bookmarks are saved in your home directory, under
Library/Prefernces, so they should still be there. Look for a Safari folder
in Preferences and you should find a file named "Bookmarks.plist"...
