Yes. And I do.

All my accounts are checked at 5 minute intervals, because in this day and age, checking for new mail slightly more often than strictly necessary doesn't affect internet performance in the slightest. We're talking about a total of a couple of hundred bytes each way to establish the connection, realise that there's nothing new, and close the connection. It's also possible disable automatic checking on a per-account basis, should the need arise.
AFAIK, Mail cannot do that, nor can Thunderbird. Eudora is the only mail app that has that kind of flexibility. And as to it not being an OS X application, it is a Carbon application, like Photoshop or Word or GraphicConverter. Not Cocoa, but still very useful.
I will be happy to be proved wrong and show other mail programs that can handle multiple accounts as well as Eudora does.

At this stage, the only feature you've mentioned that Mail doesn't have (set automatic check intervals on a per-account basis) is entirely unnecessary for anyone with an internet connection faster than a 14.4k modem.
