Well, GmailFS is a Python program, and so should run under OS X unchanged, however, it uses an underlying library to interact with something called FUSE, <http://fuse.sourceforge.net/> which appears to be a WAY cool bit of hacking, but I don't know if it works under OS X. This is the essential bit that is needed for the thing to work.
For S&G I downloaded the source code to see if it would compile. It wouldn't even configure; there's a kernel module that needs to be compiled.
I don't know how they got the Windows versions to work, but for the Linux version you need to do some kernel hacking.
This means it MIGHT be possible to do with OS X , but it would take some pretty hard-core work to get running.
