If you double click on the listing in Activity Monitor a dialog box
should appear which should have a button to make the program quit. That program will start again next time you boot.
Bingo! Apparently iTunesHelper launches with iTunes but continues running after iTunes has been quit. Quitting iTunesHelper via the Activity Monitor did the trick.
