You'll need a couple of free utilities:
MacTheRipper: Use this to copy all of the DVD to your hard drive.
You'll need a lot of room for this - possibly up to 9gb.
MPEGStreamClip: Use this to load the "VIDEO_TS.VOB" file you've
ripped out. Then you can select "Demux to AIFF" from the file menu.
This will leave you with a large, downmixed AIFF file of the whole DVD.
Quicktime: Use QT to split the AIFF into "tracks"
iTunes: Load the AIFF into iTunes and cntl+click to select "convert
selection to mp3" (the convert to type is determined by the codec you
select in the Import Option in Preferences - Apple Lossless, aac,
mp3, aiff or wav).
