I'd guess that the 3rd party disk drivers may well have caused the problem. I have a B&W G3, a 2GB Jaz and the same SCSI card and both work with the built-in 10.1 driver. I have had to manually mount it (the Jaz) a time or two and I do have to start up with the monitor off in order for Classic apps to see the Jaz or the SuperDisk (among other things). All Macs are prone to problems with the 2930U if has an older BIOS version.
I would caution against using *any* classic disk utility after installing OS X unless the publisher specifically says it's safe. If you are having problems with a drive there are a couple of things you can do to clean it up.
