To simplify, all flavors of SCSI are backwards compatible. This means that you can use the latest drive with an adapter on a Mac SE. The plugs are the interesting part. Most macs came with 50 pin connectors internally except those that use a PCI or Nubus card as an adapter. There aren't any macs that use 80 pin drives. Luckily, there are adapters to go from 68 to 50, 80 to 68, and 80 to 50 so this isn't that big an issue.
