Norton Utilities has an app called UnErase, which can find deleted files and unerase them. It works on the basis of recovering data from a location on the disk that the Finder has assinged as free but has not been used for another file yet. The problem is, if you have used the mac for a while before realising the files are deleted, chances are the physical location of these files on the hard disk has been used for another file.
