I've heard that Entourage is very similar to OE 5. I don't know anything about Entourage, but in OE that option is in Edit -> Preferences... -> Compose (tab) -> Place insertion point before quoted text.
Personally, I prefer messages to be readable in a top-down fashion, that is, with replies below the quoted text. It's nice if they are short enough that you don't have to scroll.
