This probably isn't what you're looking for, but if you resave the 
movie at a lower volume, when you open it again, it will remember that 
volume.  Of course, that would be difficult for exceedingly large 
files and would be impossible for QuickTime movies that you download 
from the web... ;-)  Or you could just turn off the auto-play feature 
in the player prefs so that you can turn down the QT movie's volume 
before it starts playing...

If you are using QT 5, go to Edit/Prefs/Player Preferences and 
deselect the checkbox "Automatically play movies when opened"
