Epson Folder, Epson Launcher and Epson Monitor3 go in the extensions folder
within the System folder. Normally an installer places them there for you.

I used to have a problem with my 4400 clone (Starmax) "Chooser" not keeping
the printer selected to the printer port, kept changing it to the modem port
which caused havoc with things. I solved it by letting the printer use the
modem port and telling the modem to use the printer port. Maybe this would
help you? Turn off Appletalk if you havent- this can cause difficulties
sometimes, I think. You can always turn it on and off again when/if needed.
