On my Rev C Beige G3 tower, I have OS X Server 1.2 in one partition and 
OS 9 on another.  The "option key" boot trick works fine for me -- it's 
the only way I can boot into OS 9 after having booted into OS X.  Then, 
to get back to OS X Server, I use the Startup Disk control panel in OS 9 
to select the UFS partition.  Works like a charm.

This "option key" trick is different from the G4 boot menu, of course.  
On the beige, I don't have control over which partition gets booted -- 
it's just something different from the selected one.  Fortunately in my 
situation there are only two bootable partitions.  At least when there's 
no bootable CD, that is. :)
