I used PowerPrint with a Quadra and an LJII. It comes with an Mac
printer-to-parallel cable and drivers. It was pretty slow, but with your PS
cartridge the amount of data transmitted is much less than the page-size
bitmap needed for PCL so it should be okay. Currently it's on sale at
http://www.strydent.com/, not very cheap but look for an older copy on Ebay
or wherever.

See particularly on cabling. 

You may be able to get by with a simple serial cable, to the LJ's RS232
port. (Note you have to change the setting on the front panel from the
default parallel port if you do.) 
There are also Appletalk cards for the LJ.
