Try the stratup disk app from the beta OS X:
Mikael Palulis has it on it's site, this is from a previous mail:

public beta. It is an app, not a CP that allows you to set the startup disk.

Is that even possible to select which OS 9 Extensions set you want to 
use when you boot into Classic, does that still work with the spacebar?
My config is not the same (B&W G3) but what I did was copying the full 
OS 9 set I have to the OS X partition, made it as clean as possible, 
then installed OS X over it. Then I selected this clean OS 9 for Classic 
in the system prefs. If I want to boot into the full OS 9 set I select 
this partition in the startup disk system prefs. That way I have two 
different OS 9 folders and don't have to worry about different extension 
sets.

Just my 2 cents.
