I think John already answered your question, but I encountered a similar problem a while ago that Open GL wasn't available in games, the cure was to enable every QuickDraw extension (the Apple QD3D ones and the QuickDraw 3D ones), after doing that OpenGL was available again, to check it I disabled it again and the OpenGL option dissappeared...
