add a GeeThree Stealth Serial Port (or similar) to the B&W
get a USB to Apple serial converter
get a LocalTalk/Ethernet bridge device, such as a Dayna EtherPrint, or similar
Do NOT spend $80 for a USB to ADB converter. Such a device would be used for I/O devices, only: ADB keyboards, mouses, tablets, etc.
As for using the USB to parallel converter you already have, you would NOT be connecting via AppleTalk*. You would treat it as a USB PostScript printer. Do you have all the appropriate USB printing extensions and control panels installed and enabled?
*With a B&W, you could only connect to printer via AppleTalk if 1) the printer has an Ethernet interface, 2) you use a LocalTalk/Ethernet bridge, or, 3) you have the printer attached (by any means) to another Mac that you can connect to over ethernet. In all such cases, the key is AppleTalk over Ethernet.

The only chice I have for Appletalk is remote or ethernet.
The chooser doesn't pick it up either.
