The cameras that convert analog to dv in real time are almost as cheap as the cheapest and there is no need to record anything to tape during conversion. I use a Canon zr-70 and the results are wonderful.
One other note to add. When you do digitize your beautiful hi-8 or vhs tapes and look at them in iMovie you may be shocked to see how dark they look. This happens in Final Cut too. I don't know why there isn't a way to correct this, depite the difference in video and computer monitor phosphors, etc, but fear not. When exported to tape, vcd or dvd, the video will shine like the original. The only way to see your image as it will appear in the end is to export it as you work to a tv monitor. Both iMovie and Final Cut allow you to do this, through the firewire port. But you need a dv to analog converter to view it.
