I've flashed several versions of the PC Radeon 7000 for use in Macs. Just last week I flashed an ATI retail box 64MB, single VGA version for use in my beige G3. It works fine except for random video problems (screen is a garbled mess) on waking from sleep. I saw the same thing on another 32MB card I flashed and had been using in a G4 upgraded 9600. I didn't bother hunting for any updates to fix this problem and just used the copy of the Mac ROM I had from a about 6 months back. There may be a solution to this problem by now.

All I do is either power off the monitor manually when I know I won't be using the Mac for awhile or set the energy saver on the monitor to cut off the display instead of doing it through the Mac.

When I had the 9600 I was originally running two monitors off of the Radeon 7000 Mac Ed. Then I added the flashed PC card and tried a single monitor on each. In that case I saw a very slight improvement. I don't still have the 32MB card for comparison, but the 64MB version in the G3 doesn't seem any faster to me. It will be a step up from on-board video though.
