When you go into the OSX save and open dialogue boxes, make sure you hit the little blue arrow at the right to get the large dialogue box. After you have the large box, you then scroll horizontally with the scroll bar at the bottom for your hierarchical access.
This flipped me out the first time I saw it. I have no idea why anyone would want the small dialogue box.
