Is it possible to do the 10.2 installation using VNC? That's the roadblock I'm running into. . .

Nope...for that you need a real monitor.
Get a regular VGA monitor (dime a dozen) and an adapter (Check the LEM swaplist, you ought to be able to score one for a few bucks.)
You'll need the adapter anyway, I think, since it won't want to run headless otherwise.
