You get stereo

Absolutely, since 5.1 sourround requires encoding (on the production end)
and decoding (on your end).

If you're going to stay in OS 9 for a while, see if you can grab one of
those SoundBlaster "Live" for Mac cards. Full support for the 9.x at a
reasonable price ($50-$60 U.S.). However, for OS X look into an M-Audio
"Revolution" 7.1 card, which has built in surround decoding as well as full
support (I/O) for uncompressed audio; and it's reasonable in price, too.
The Soundblaster "Live" has no OS X support, unless someone else is doing a
hack (that would be cool!)
