It really depends on the software you're running. The only difference between a G3 and a G4 is Altivec (or Velocity Engine). This is an additional set of instructions designed to make some processes remarkably faster, primarily in the field of graphics and sound. But the software has to be written to take advantage of those instructions.
Aside from Altivec, G3 and G4 processors run megahertz for megahertz. In other words, a G3/500Mhz is just as fast as a G4/500Mhz on a program that is not Altivec-enhanced.
Overall, I think the best bang for your buck, if you're not heavily into graphic or music production and don't plan on watching a lot of DVDs on your Mac, would be the G3/900. Bear in mind, however, that new software developers do have the Velocity Engine at their disposal, and as new programs are developed to taking on the larger tasks of the day, we could find more and more G4 requirements.
