Welcome to the G3 forum, I'm sure you will like it
here as the folks are so helpful.  I'm rather new here
myself....and came here with this same question.
I too have a Wings card and was with the same
question.

I have found some programs I'd mention to you.
Freeware:

Coaster 1.1.3  is available here:

Audacity (third one down on this page)

Audacity doesn't come with a Mp3 editor due to 
it being freeware. They would have to pay royalties
for Mp3 and therefore wouldn't be able to offer it
as freeware.  Audacity suggest "Lame" for PC's and
"Lamelib" for Mac's, as it is an opensource encoder.
Some people don't like Lame but there are many free
Mp3
encoders.

all this stuff is freeware and would get you started.
The Audacity has some good help/tutorials.

We have been discussing lately the merits of the Wings
card and the basic personality card which used the
special Apple "whisper mic"

We've used "Music Match" to go from WAV to Mp3 and
back
with a 10:1 comprssion.  Nearly 20 hours of
albums/tapes burnt to one disk with space left over.

So, if you wish to check this stuff out...it'll get
you started.  I got started into audo by wanting to
make books on tape. Later to record my albums and old
tapes onto disk.
