This is one of the reports:
"When I opened QuarkXpress and Illustrator I was quite dissatisfied
because it took 3 times as long as with the previous G4-500 card. After 
that I consulted the xlr8yourmac.com site and I found out that the bus 
speed is reduced to 66 MHz. I didn't know that and it wasn't written 
anywhere."

On topic:
The G3/1GHz would be faster than the G4/500, even in Altivec enhanced 
apps, so IMHO go for the G3/1Ghz.
On the other hand, the G4/500 is tested and guaranteed to run @ 600MHz 
by OWC:
