Ok, so if I use Disk Copy to create a disk image on the Windows 2000 Server, then clone the disk (with what? Carbon Copy?), then if I hose this machine up, I can always format, reinstall OSX, then restore my cloned drive...right?

Not directly but it will work with a local disk image that is stored over the network.
