actually, i've never had any trouble with scsi other than one older maxtor drive that just didn't like macs period which was eventually replaced by a newer one that still wasn't real happy with the mac os. have you checked for the usual problems? i.e. is the scanner terminated? are you using a proper scsi cable? there are cables meant for pc printers that have the right connectors for 25 pin scsi but the cable isn't high enough quality for scsi, it's possible if you have one of these cables that it's the problem (the scanner would have fewer problems with it because they are usually fairly slow, however it could cause enough problems to interfere with the internal drives). beyond that, sadly adaptec has decided to dump the mac (i use a machine with a 2930 card so i'm not happy since there won't be drivers for it in osx unless apple or some other third party writes them).
i have heard that attotech <www.attotech.com> is still actively supporting macs and osx and makes excellent cards. if it isn't a termination or cable problem, or a scsi id problem then i'd definitely recommend a different scsi card though you should definitely check all of the above first since any card will have problems with bad cables, unterminated devices or scsi id conflicts.
