If you are starting with a mostly unmodified machine, I agree with the recent comment that you'd be better off with a later machine than the Beige. It will be cheaper and easier to get the speed and performance.
If you want to stick with the Beige, it seems that the goal would be economy. 500 mhz upgrades (g4) are very inexpensive right now and make more sense for a Beige, when you could get well equipped newer computer for what the 1 gig zif would cost. Except for the comparitively slow 466 mhz G4, my Beige is pretty much maxed out. But I built it incrementally, and a lot of that happened when used newer machines were more expensive. An upgraded Beige can be very versitile, with ADB, scsi, ide and ATA, Firewire and USb all at work at once. And serial ports too. So all your legacy peripherals can still be accessed. The only limit seems to be that usb 2 can be a problem on a Beige, but Firewire makes usb 2 less important. I love my Beige, but if I were starting again, I'd start with something newer, for sure.
