Not only will the LW 12/640 work very well with your G3, but it has true PostScript Level 2 (hard to find on any printers) and the Ethernet is great.
For more speed, it will also take up to 64 MB RAM (cheap now, shop around, see Ramseeker.com) and, if you need it at all, you can probably find the Duplex-printing unit cheap on our list sponsor lowendmac.com or eBay (requires 12 MB RAM).
Toner is tricky since Apple hasn't sold it for ages. You have to find equivalent models, and yours matches the Xerox Docuprint 12 series, among others, and takes the Xerox Model 13R548 Image Cartridge that you can find at major office supply stores, online, etc. It may be over $100, so consider the online coupons routinely available for Office Depot, Office Max, etc., plus they all seem to ship free over $50.
