Andrew,
Seems to me you want all the speed you can afford for video editing, so a Dual 2.0 G5 (fast chip, bus, etc.) with lots of RAM would be ideal (and a Dual 2.5 the ultimate). Note that you need the just-released VPC 7.0 to run on a G5--and if you already own an earlier version (as I do) you will have to wait until at least next month for the upgrade package.
