How about a LaserWriter 16/600 PS, the best of the Apple LaserWriters?
 My system is similar to yours, several Macs running OS 10.3.5, and
Windows desktops and laptops running XP Pro.  Two  networked LW 16/600
work perfectly.  You can still pick up relatively low-page-count units
for low bids on eBay.
