The 170X works fine with a Postscript printer, yes. (or even non postscript, if your'e using OS 10.2 or better, with Gimp-print, built-in to 10.3...our office printer is a non-postscript Laserjet 4 hooked up via a JD and I never have problems printing to it.)
All it needs is an IP address. If you have a network handing out IP addresses, then you're set. It will autoselect an address if none is offered, it uses 192.0.0.192. It has a built-in webserver for configuration. The 170 does NOT do appletalk (although other JD models do)
With OS X use IP printing, the server name is the IP address, leave the queue name blank. With OS 7.5 + use Desktop printing, which also lets you select IP printing (it's called LPR in the setup).
Jetdirects have been pretty bulletproof in our experience, we've got some that have been in use for years. The only exception are the three-port ones, which never worked very well for us.
