My B&W G3/300 now 900, OS 9.1, will not keep the 6 GB HDD asleep. It spins down but 5 to 10 minutes later spins back up again.

All I can tell you is that my B&W 350 with the standard 6 MB HD ran great from 1999 until I just retired it, and the HD went to sleep properly with all versions of the OS, from the one it shipped with, right up through OS X 10.2. No idea what causes your drive to restart, but understand the frustration!
