I keep historical versions of files on projects till it's all finished and I've been paid, and maybe for a few months after that. Occasionally you find some software has corrupted a file, or part of it, and you don't notice till you've already done more work (and made more backups). More commonly, I or someone else makes a mistake (a search and replace with unexpected side effects, eg) and deletes or messes up stuff, or I decide I want to revert to an earlier version.
