Pic a .jpeg file. No pun intended.
Click on it once and use the file menu to "Get Info. "
Turn down the tab called "Open With."
Choose Photoshop.
Choose "Change all..."
Then go but Mac OS X the Missing Manual by David Pogue... Just kidding.
I'm an Apple Certified Hardware Tech, but that book is the best one out
there for questions just like the one you just asked.

And I do have Pogue's Missing OS X Manual, but I had scoured it to no avail for information how to do this, because I didn't know what topic to look under. In his section on Preview (p. 297-300) he says nothing about being able to change default programs to view graphics files. Now that I know (thanks to you) about doing it with Get Info, I can see that he has one sentence there under that topic about how to do this, but I never would have thought of looking there if you hadn't told me.
Anyway, I'm indebted to you, and I appreciate you taking the time to put me right on this.
