I am trying to setup a group for my kids to be in on the Mac that allows them access to games and such that I allow in this group. But I can't seem to figure out how.

Check out the restricted logins. You can specify for a user what apps they can run, whether they have full access or limited access to the finder, etc. It's in the Accounts section of System prefs.

I want a common folder that if I install an application that anyone who is a "user" on the computer can run.

/Applications is it. Any user on a system, unless otherwise restricted (via the accounts pref panel) can run an app in that folder.

Also, I try to go to a terminal window and type "su", to get the super user access, and I don't seem to have the password. Does it need the login name with the password? If I set up the machine, wouldn't I have that access, I am in the Admin group.

Use sudo to do a single command, or sudo -s to get a root shell. Then you use your regular user password, so long as your user is an administrative user.

su doesn't work because, by default, the root account is not enabled in OS X, a very wise decision on Apple's part.
