AdvanceMENU, AdvanceMAME and AdvanceMESS, which are primarily targeted at cabinet use, would be applicable for console use too, and already work on Mac OS X. However they are not easy to install - they are compile, install and setup things - command-line oriented. Nor are they optimized for the Mac - they are relatively slow. Still, an initial stab at this could just package up pre-compiled versions of all of these plus the needed SDL libraries into a single Mac OS X installer, which would also install default config files with appropriate settings "out of the box" and a double-clickable launcher for AdvanceMENU (a simple AppleScript app will do.) So we'd just try to make installing all this stuff as Mac-easy as possible.


A simplistic version of booting right into AdvanceMENU would thus be a normal OS X install with automatic login to a particular user account and you put the AdvanceMENU launcher into its login items. Now you can boot and play without need of keyboard or mouse.
