I'm certainly no expert on this, but in general, some of the CUPS printer drivers will work for unsupported printers. For example, we have a Ricoh copy machine at our office that supports IP printing. For the Mac you are supposed to purchase the Postscript package which is several hundred dollars. I played around with CUPS and tried some of the HP LaserJet printers and was able to get the copy machine working using the HP LaserJet 6 driver. I won't handle complex graphics stuff, but for text printing, it works really well.

I believe I have an Epson Parallel-USB cable lying. I just know nothinbg about CUPS and GimpPrint, but I'll dig.
