For Word, there's AbiWord <http://www.abisource.com/> or NeoOffice <http://www.neooffice.org/> which is a replacement for the whole Office suite. Both read/write Word files.

Photoshop you can use the Gimp <http://www.gimp.org/> but that's sub-optimal, imo, since it's an X11 package and not entirely Mac native. ImageJ <http://rsb.info.nih.gov/ij/> is a good image manipulation prgram, more oriented to scientific image processing than Photoshop, and there's Graphic Converter <http://www.lemkesoft.com> which is a killer bargain at $50, and does nearly everything that PS does (including running scanners and PS filters) or Photoshop Elements which is a LOT cheaper than Photoshop for 90% of what Photoshop does. (and if you don't work with CYMK files, it'll come close to doing 100% of what PS does.)

To replace Filemaker you could use a variety of open source database systems like MySQL and Postgres, but those are a little industrial strength for your needs, I fear. But upgrading FM is pretty cheap.

Fetch works in OS X if you upgrade to the carbonized version, or you can use ftp on the command line for free.

Acrobat is less needed since OS X can put out PDF files natively, from any application that uses Print Services, which is pretty much everything.

If you do forms and suchlike from Acrobat, you'll need to upgrade.
