Chuck the Preview prefsin your Library/Preferences folder, it's called com.apple.Preview.plist For some reason Preview seems to get screwy on a regular basis.
No such file in that directory, thanks though for future reference.
I should have clarified not /Library/Preferences, but your user /Users/<username>/Library/Preferences folder. Most program prefs are tored on a per user basis, so each user has a Library/Preferences folder as well as the system-wide one.
