Stick with the dual processors. You won't see a massive benefit from running a single faster CPU, especially with all that multimedia stuff your doing. Spend your money on memory (you can't have enough with X) and fast disks which will help enormously - trust me, you haven't seen OSX fly until you've seen it off a pair of WD Raptors striped RAID 0 :)
