<Quite new here so, forgive the basic questions please:>

You are definitely forgiven. I've been on and off this list for a whole 
year now, and I STILL ask "baby questions." ;-)

Anyway:

<1)  I have just acquired a beige g3 running OS8.1. Is it possible to
network the beige with my B&W G3 running OS X 10.2.8? The B&W also has
OS 9.2.2 and OS 8.5. Do both computers need to have similar OS's to
network? How do I go about setting up the network?>

I don't have OS X,  however, I did just have to network two Macs on 
different OS's. I just got a Powerbook 5300c (it came with OS 8.5), and I 
needed to load it with data and apps I use which reside on my G3/266 
Beige (OS 9.1) Using AppleTalk and FileSharing, I succeeded in 
transferring everything I wanted from the G3 to the PB. This also 
included an install version of AppleWorks from CD ROM (the 5300c doesn't 
have a CD ROM built in, but the G3 does, so that had to flow from the 
direction of the G3 to the 5300c). Here's how I set that one up:

Unplugged cable from my LaserWriter. One end was already in the G3, so 
the end I pulled out of the printer went to the printer port of the 
5300c. Then I turned on FileSharing from the control panels (both Macs) 
which required activating AppleTalk, and set up AppleShare in the Chooser 
(the G3). Voila -- they were networked, and I ran my data transfer from 
the G3 to the 5300c.

Of course, if you have the cards, cables, etc., Ethernet connections are 
possible between two Macs and the data transfers I conducted with the 
above-described setup would have gone a lot faster if I had the right 
equipment (and the knowledge to set it up), so I've never done this and 
can't provide instructions. I'm sure someone else on the list can, 
though.  :-)

<2) Can the two computers share a dial-up connection? Can both computers
be connected to the internet simultaneously?>

To the best of my knowledge, to do this you'll have to use Ethernet. Even 
though I've never done it myself, I know it's POSSIBLE, but unlike the 
Mac-to-Mac network I created with AppleTalk, etc., to get two computers 
on the internet simultaneously through one dialup connection, you'll HAVE 
TO go the Ethernet route.
