PowerPrint is a long term Mac product. I have used it, or it's predecessors, since 1986 on a MacPlus with a Daisy Wheel printer. It works fine and I do not remember any problems I have had over the years as long as the printer was listed as supported, and they list well over 1000. They do make a USB version.
I have not used it on anything newer than a Centris 610, where there was a small performance hit. I am guessing that the hit will not be too noticeable when you are using a G3 for the print server only.
IIRC, PowerPrint does include the ability to share attached printers over the network.
