Me and me clients tend to gravitate toward this general setup:
OS and Apps on the primary internal HD.
Page/swap files go on a secondary internal, if available. Otherwise
they go on the primary. That drive is also good for app scratch
space, cache files, etc.
Long-term user data (emails, etc) go on a 3rd internal or an external.
All other data (current projects, etc) go on other drives, especially
externals, or shared/network volumes. ...If you're using firewire,
get long cables! Put the drives on knick-knack shelves all around
the room! Caution: such configurations attract furry troll dolls and
ceramic figurines. Best to use external drives that have curved
tops. :)
Currently, we're avoiding drives larger than 100 GB. Had too many
die too soon. To "create" volumes bigger than 100GB, we use various
RAID solutions.
Backups:
Depending on the client, we use drag'n'drop, CCC, Toast, and/or Retrospect.
A few of my clients like to have hot HD backups of the OS & Apps,
made with CCC or Retrospect. Most have given up on this -- too much
trouble, not overly necessary (the OS and Apps can be easily
reinstalled from their original installation medias), and the
restored volume sometimes has problems. IOW, OS X can be a bit
fritzy.
The user data we primarly burn to CD or DVD. Many of my clients have
had burnable media degrade after a year or so, so they also write it
to JAZ disks, tape, and/or some other removable media. Sometimes it
pays to keep multiple copies of your backups! And, of course,
backups are best kept far away from your computer(s) -- another room,
neighbor's house, miles away,...
