Sounds to me like you've got a marginal DIMM. It will pass the start-up memory test, and can handle some data, but will eventually corrupt the data and fail.

Try removing removing two of the DIMM's and then restarting the G3 and run your applications. If after a period of time, say 1/2 hr. you don't have a system crash, you've located the DIMM that can't handle data correctly. If you have a crash shut-down the system and replace one of the two that are in the system with one of the two that you removed in the first step and repeat the test. If again you have a system crash, replace the DIMM that wasn't replaced after the first pass. Keep repeating this procedure until you have located all bad DIMM's

Or you could remove them one at a time until you have located the marginal strip.
